Join us every Tuesday this summer for wine made in the Pacific Northwest, poured by some of our best local winemakers, and paired with seasonal small plates from our Skip Kitchen.

This week, we welcome Jim Fischer and Jenny Mosbacher from Fossil & Fawn in Portland. Fossil & Fawn started out in 2011 with a clear goal - make yummy wines. They've found that the kind of wines they like, and thus the wines they make, are executed with a natural approach that allows the grapes to do the talking. They are lucky to work with a handful of beautiful, old vineyard sites farmed by people that truly care for their land. Their job in the winery is simple: don't screw-up the fruit. This means no added yeast, bacteria or enzymes - just perfect grapes, a doting, watchful eye, and a bunch of hard work.

The upside of this rigorous process, is the end product: wines with acidity, structure, and balance that will brilliantly compliment the food pairings and scenery of Suttle!
